The new floor is down in the activity room and today was the first breakfast. It’s always very difficult to know how many are coming, it’s all guess work.


The new floor is down in the activity room and today was the first breakfast. It’s always very difficult to know how many are coming, it’s all guess work.
I start at 6.30am and need to cook until the doors open at 8am, thankfully the warmer trays I bought work like a dream and are a great idea. After cooking 4 lb of bacon and 30 sausage patties, and placing 24 biscuits, (to me they are not biscuits but scones) these take 30 minutes to bake in the oven and really need to be watched. The last item to be cooked is the gravy and I get rave remarks about my gravy, as if it’s something special, it’s not really but the customers like it.
Today was a slow start and then at 8.30am they came and it’s difficult to cook the eggs as fast as people came in so we got a little behind at one time but only for a few minutes. Then we ran out of bacon so as well as cooking the eggs, I needed to juggle cooking more bacon.
Some weeks actually most weeks the sausage patties are the favourite this week was different and bacon was the hot one on the menu.
We serve 2 eggs, a choice of 3 bacon slices or 2 sausage patties and a rotating selection of Biscuits and Gravy, or Pancakes or Potato’s, Orange Juice, Coffee, Toast and Preserves all for $4.
This week was Biscuits and as well as running out of Bacon we ran out of Biscuits as people were asking for extras which threw me out of kilter, so I cooked more biscuits, wow did I work hard this morning. We served 26 breakfasts in 1 hour and a half.
It’s great to be able to sit down at 9.30 and have a bite to eat, oh so relaxing.
Now time to clean up and this takes a further 1 and a 1/2 hours but cleaning is necessary and part of the process.
I think in the summer I’ll revert to scrambled eggs as then I can cook ahead of time and that’ll save time.
So there you have it a busy morning in Texas.
